Pork Menudo Filipino Recipe

Hi Everyone!

Another day in Janice Kusina and I'll be cooking Pork Menudo!

Pork Menudo is an easy to prepare Filipino dish and perfect for weekday dinner or even lunch.
And this recipe is also inexpensive, the total cost for a family of 4 is less than $10, that is about $2.5 per head. Great savings indeed!

With all that said, let's go ahead on the ingredients:



Ingredients : (Serves 3 - 4)

1 tbsp cooking oil
3 cloves garlic, minced
1 small onion, diced
1 medium carrot, diced
1 small red bell pepper, diced
2 potatoes, diced
1 cup tomato paste
1 tbsp lime squeeze
1 cup water
200 g pork, cut in bite-size pieces
marinate pork on 1 tbsp soy sauce
and 1 tsp lime squeeze

optional:
1 tsp sugar
1 tbsp sultanas (raisins)

Steps:

1. Heat casserole dish and add cooking oil.
2. Saute onion for 1 minute and garlic until fragrant.
3. Add marinated pork and stir fry until lightly browned.
4. Add potatoes, carrots and stir fry for 3 minutes.
5. Add water and simmer for 15 minutes.
6. Pour in tomato paste and lime squeeze. Mix together.
7. Bring to a boil.
8. Add bell pepper and simmer for 15 minutes until pork is cooked.
9. If you like it sweet, add sugar and sultanas.
10. Turn off the heat and serve hot with white rice.

Lechon Kawali (Deep Fried Pork Belly) Recipe

How to cook Lechon Kawali (Deep Fried Pork Belly) Recipe


Lechon = pork dish, originated from the Spanish term lechón
Kawali = Tagalog term for frying pan or wok

Thus, Lechon Kawali means cooking or deep frying pork in a wok with lots and lots of oil =)

Ingredients : (Serves 2 - 3)
300 g Pork Belly
1/2 medium onion, sliced
1 tsp black pepper
2 - 3 pcs bay leaves
1 tsp salt
4 cups water
cooking oil (enough to deep fry pork)

For Garlic Vinegar Dip,
1 clove garlic, minced
1/4 cup vinegar
1 tsp freshly ground black pepper
Mix garlic, vinegar and ground black pepper in a bowl and set aside.

Steps:
1. Place pork belly in a pot, add onions, black pepper and bay leaves.
2. Pour water and bring to a boil over high heat.
3. Then, simmer for 1 hour on medium heat.
4. Drain pork or set it on a wire rack for 15 minutes.
5. Sprinkle some salt and bake in the oven for 20 minutes in 200 degrees Celsius (centigrade)
6. Turn on your deep fryer and heat the oil.
7. Once hot, gently place pork belly in the oil. Be careful, the oil is very hot.
8. Cook 2 - 3 minutes for each side.
9. Drain and let it rest for a while before cutting.
10. Serve hot with white rice.
11. Sprinkle spring onions and add sliced tomatoes on the side.
12. Enjoy!

Kare Kare Filipino Recipe (Beef in Peanut Stew)

Hi guys! If you like to try another Filipino recipe at home, try to cook Kare Kare!
It's yummy! Simple and easy :) Give it a try!



Ingredients : (Serves 3 - 4)

400 g Beef Brisket and Oxtail
7 cups water (keep 3 cups beef broth)
1 tbsp annatto seeds (dissolve in 3 tbsp beef broth)
2 tbsp peanut butter
4 cloves garlic, crushed
1 medium onion, diced
2 medium eggplants, sliced
1 bunch green beans (sitaw) cut in 2 inches
Mama Sita's Kare Kare Sauce Mix (optional)
2 bunch Chinese Cabbage (bok choy)
1 tbsp Thai Sticky Rice (uncooked, dry roasted and finely ground)
1 tbsp Sauteed Shrimp Paste (bagoong)
1 tbsp canola oil

Steps:

1. Place beef brisket and oxtail in a pot with water. Heat on high and bring to a boil.
2. Simmer for 1 hour with the lid half-open. Set aside and keep beef broth for later.
3. In a casserole dish, heat oil and fry eggplants. Set aside.
4. On the same casserole dish, saute garlic until fragrant.
5. Add onions, cook until transparent.
6. Put back cooked beef brisket and oxtail and fry until the meat turns brown.
7. Dissolve Mama Sita's Kare Kare sauce in 1 cup of water and pour in.
8. Add 3 cups of beef broth.
9.  Add uncooked sticky rice. Mix and bring to a boil.
10. Pour in dissolve annatto seeds liquid and add peanut butter for thicker sauce and additional flavour. Simmer for 2 minutes.
11. Add fried eggplants and green beans, cook for 2 minutes.
12. Finally, add bok choy leaves and cook for 1 minute.
13. Serve hot with white rice and shrimp paste (bagoong) on the side. Enjoy!

Adobong Kangkong at Baboy Recipe (Kangkong and Pork)

Adobong Kangkong at Baboy. Adobo is a Filipino style of cooking that uses vinegar and soy sauce as the main ingredient.



Ingredients : (Serves 4 - 5)

For marinating:
400 g Pork Belly
1/4 cup soy sauce
1/2 tbsp lime juice
1 tsp pepper
2 cloves garlic, crushed

1 bunch of Kangkong leaves, separate leaves from stem
3 cloves garlic, minced
1/4 cup soy sauce
1/8 cup vinegar
1/4 cup water
2 pcs bay leaves, dried
1 tbsp cooking oil
salt and pepper to taste

Steps:

1. Combine soy sauce, lime juice, pepper and crushed garlic in a bowl.
2. Pour the above mixture to the pork. Cover and marinate for 1 - 2 hours in the refrigerator.
3. Drain the pork and discard the marinade.
4. Heat a wok on high heat. Add cooking oil and stir-fry the pork.
5. Once cooked, take out from the heat and cut the meat in bite-size pieces. Set aside.
6. Using the same wok, saute garlic for a minute.
7. Add water, soy sauce, vinegar and bay leaves. Don't mix. Simmer for 1 to 2 minutes.
8. Then add kangkong stalk and cook for 3 minutes.
9. Add salt and pepper.
10. Put back the cooked meat and simmer for another 3 minutes.
11. Finally, add kangkong leaves and red chillies (optional) cook for 1 minute.
12. Serve hot with rice.

Salami Fried Rice


Lots of left over rice yesterday, so I am making Filipino Style salami fried rice for lunch today :)
Enjoy!



Ingredients : (Serves 3-4)

3 cups cooked rice
1 1/2 tbsp canola oil
1/2 tbsp soy sauce
1 onion, minced
4 cloves garlic, minced
1/2 cup salami, diced (or chorizo)
2 eggs, lightly beaten
1 tsp salt
1 tbsp sugar
coriander leaves (optional)

Steps:

1. Heat wok in high heat and pour oil.
2. Saute garlic for 1 minute. Add onion and cook until transparent.
3. Add in salami and cook for 2 minutes.
4. Pour in the beaten eggs and let it cook for a minute before before mixing.
5. Add sugar and salt, cook for 1 minute. Set aside.
6. On the same wok, heat the rice in 1/2 tbsp of oil.
7. Add soy sauce and continue mixing with rice.
8. Put back the salami egg mixture we cooked earlier.
9. Stir-fry until the rice becomes evenly brown.
10. Serve hot and enjoy!

How to prepare Beef Wrap


We are craving for some wrap, so we decided to cook beef wrap for tonight's dinner. It just needs the basic pantry ingredients, nothing fancy. Easy and simple steps! Hope you enjoy!

Ingredients : (Serves 3 - 4)

500 g minced beef
1/2 tsp salt
1/2 tsp pepper
1/2 tsp ginger powder
1/2 tsp turmeric powder
1 tbsp sesame oil
1 tbsp olive oil
2 cloves garlic, minced
1 medium onion, minced
2 tsp Magic Sarap Seasoning
1 red chilli
1/2 tbsp fish sauce
1/2 tbsp soy sauce
1/2 tbsp lemon lime juice
1 tbsp brown sugar
1 cup red bell pepper, thinly sliced
some basil leaves

For Wrap,
1 bag of Spinach/Rocket (Arugula)
1 bag of White Wrap
1 1/2 cup shredded carrots
1 cup shredded Cheese

Steps: 
1. In a large bowl, put in the meat and mix in salt, pepper, ginger powder and turmeric powder. Set aside for 5 - 10 mins.
2. Heat the wok and pour sesame oil.
3. Fry the beef for 5 minutes.
4. Once cooked, drain any meat excess oil and set aside.
5. On the same wok without the sesame oil, pour in olive oil.
6. Saute garlic for 1 minute and onion until translucent.
7. Put back the cooked meat, red chilli and Magic Sarap seasoning.
8. Add in  red chilli, fish sauce, soy sauce, lemon lime juice
9. Plus brown sugar and red bell pepper, lower the heat to medium and cook for 3 minutes.
10. Add basil leaves and cook for 1 more minute.
11. Turn off the heat. And prepare the wrap.

Wrapping,
11. Place the wrap in a plate and carefully add spinach/rocket, mince mixture, carrots and cheese in the center.
13. Fold both sides and the other end.
14. Serve.
